Macaroon Cookie Class

Our Japanese friends have taught us so much about their culture through cooking it was time that they learned a bit about ours.
I helped teach a cookie session where I taught my macaroon recipe. A recipe with all of the ingredients available at ta Japanese grocery store.
We chatted as we measured and mixed and in the end had a delicious cookie.
Coconut Macaroons
5 cups coconut (I used a whole 14 oz. bag and about 1/4 of a bag)
2/3 cup flour
1 can (14 oz) sweetened condensed milk
1 egg white
1/4 tsp. salt
1/2 tsp. vanilla extract
1/2 vanilla bean, split
Preheat oven to 350.
1) Measure and mix coconut and flour in a large mixing bowl.
2) Add in condensed milk, egg white, salt, vanilla and vanilla bean. Mix thoroughly.
3) Use a cupcake-scoop and place scoops onto a cookie sheet lined
with parchment. Bake
for 20 minutes or until golden brown. Remove from cookie sheet
immediately and cool on a wire rack.
